Develop your culinary expertise and step confidently into leadership with this comprehensive course. Designed for aspiring professional chefs, you will prepare a range of meat, vegetable and meat products and dishes to strict specifications. You will refine your skills, improve your precision and expand your repertoire using advanced methods. You will craft an array of artisanal sauces, emulsions and finishes. You will also learn how to supervise and train a high-performing kitchen team while managing food safety.
To qualify for this course, you will need a minimum of: 2 GCSEs at grade 4-9 (including English and maths) and a Level 2 Diploma in Professional Cookery.

- Develop a range of advanced preparation techniques such as smoking, curing, drying and tenderising
- Learn how to prepare a range of fish and shellfish to restaurant standards, including skinning and stuffing fish, removing bones from a carcass and opening oysters
