Course overview

Whether you are looking to make family dinner a little more exciting, or seeking to improve your culinary skills for work or pleasure, this course is for you. The Culinary Skills qualifications teaches you everything from making sauces and stock, to handling meat and poultry and making delicious desserts.

There are no entry requirements for this course, but learners will benefit from a good level of comprehension and dexterity.

This course is eligible for government funding, this means you may be able to enrol onto this course at a reduced fee.Upon enrolment, you will be asked to provide your most recent payslip and/or Universal Credit statement (in full) to assess whether you are eligible for the course to be fully funded or at a reduced fee.

What you'll learn

 

  • Learn how to prepare and cook fresh stocks, soups and sauces
  • Improve your knife skills and learn how to prepare fruit and vegetables according to dish specifications
  • Learn how to cut, prepare and season a variety of joints and cuts of meat, poultry, offal and seafood
  • Learn how to pair flavoured butters and oils with a variety of dishes and ingredients
  • Prepare and cook a variety of hot and cold desserts

Students studying our catering and hospitality courses will spend a lot of time in the college’s brand new kitchens, which provide the opportunity to acquire practical expertise in a realistic working environment to build your culinary skills.

Other facilities include our brand new training kitchens and Brooks Restaurant, our 60-seater training restaurant that is open to the public. In Brooks Restaurant, students will learn to cook and serve high quality food to paying customers.

Students will also benefit from the tuition of our highly qualified lecturers, all of whom have a wealth of expertise and links with the catering industry. Many of our chefs have worked in top London hotels and restaurants, have won national and international awards and have even cooked for a host of celebrities and royals.


What you'll need

It is recommended that you purchase appropriate books, clothing and equipment for you to carry out the course, details of which will be provided at enrolment. Students are also allocated a certain amount of free printing, after which a small fee will be incurred. You can purchase more printing credits on our online store, which can be found here.


Career Pathways

Upon successful completion of this qualification, learners can progress onto a range of other culinary diplomas, such as the level 3 diploma in professional cookery.
