Brooklands Technical College’s newly built state-of-the-art teaching kitchens and restaurant, with its highly skilled lecturers, enthusiastic students and a wealth of experience, creativity, and culinary finesse, are taking Brooks Restaurant into its’ next exciting chapter.
The new Brooks Restaurant is a 45-seater training restaurant will initially open on a Wednesday evening, serving a seven-course tasting menu with vegetarian option to the local community and beyond. At the heart of our cooking is a deep respect for classical dishes and timeless flavours. Our approach is to honour these traditions while refining and reimagining them in ways that surprise and delight, creating lasting memories for every guest.

We offer a seven-course taster menu, themed evenings, Christmas menu and private hire.
Our students are the reason that we are here and we give them a real working and commercial environment in which to train. We are proud to have trained chefs, who have gone on to work at Michelin starred level restaurants, at home and abroad.
With a foundation in British, French and European cuisine, the lecturers training and experience have shaped a style that celebrates the finest seasonal ingredients. We focus on using exceptional local produce and suppliers and precise techniques to let each flavour truly shine. For us, there’s no greater reward than seeing guests enjoy the food the students have created. With our open kitchen at Brooks restaurant, one of the most fulfilling parts of learning experience for our students is the opportunity to personally interact with our guests.


I started my career over 45 years ago studying at Blackpool and Fylde Catering College, passing my Level 1 & 2 City and Guild Diplomas and Level 3 Patisserie.

I have been working in the catering and hospitality industry for just over 50 years and attended Westminster College as a student.

Pan seared Sea bass fillet with a cauldron of mussels, clams, tomato, saffron and Samphire
Slime green coated lamb rump with devilled creamed potato and baby vegetables
Heritage tomato tart tartin with mozzarella and bail

Dark chocolate fondant with a molten Centre and buttermilk ice-cream
Blood orange cheesecake with red fruit jelly and cotton web candy

Brooks Restaurant is a 45-seater training restaurant, open on a Wednesday evening, serving a seven-course tasting menu or vegetarian menu to the local community and beyond.
Throughout the year, we also offer themed evenings, where we can experiment with a more varied menu and decorate the restaurant in a suitable style.
Our Christmas menu starts on Wednesday November 26th and will run on a Wednesday evening throughout December, catering for all types of festive gatherings.

Indulge in a specially crafted, three-course menu inspired by the flavours and colours of the season. From spine-tingling starters to devilishly good desserts, our student chefs have conjured up a menu that is both thrilling and delicious. The atmosphere will be one of gothic elegance, setting the perfect scene for a memorable night.

Join us for a night of Scottish spirit and great food as we celebrate Burns Night at Brooks Restaurant. Our student chefs have created a fantastic menu, with the star of the show the famous haggis (with vegetarian and vegan options available!)
Hear the haunting sounds of the bagpipes as the haggis is piped into the room and enjoy a delicious, traditional meal and a wee dram of whisky to toast the bard.
This is a perfect opportunity to enjoy a memorable night out while supporting the next generation of culinary and hospitality professionals.
