An advanced natural progression programme from the Level 2 Diploma in Professional Cookery Qualification. This is another main feature of the Hospitality Department programme. It will support all of the latest food technologies, regional international gastronomic innovation, future sustainability development within hospitality, & a scientific approach to gastronomy. This qualification focuses on the chef’s ability to understand the mechanisms & transformation that occur during the culinary production of food. The course will be a platform for all chefs to develop their critical & creative abilities in their approach to modern innovative practices with a firm focus on the execution of the production method. You will additionally participate in specifically designed Industry work experience to compliment the specialised advanced practices achieved within your qualification.

Entry Requirements
What qualifications will I need?
To qualify for this course, you will need a minimum of: 2 GCSEs at grade 4-9 (including English and maths) and a Level 2 Diploma in Professional cookery.
Progression
Higher Education or employment as Commis chef or in the catering and hospitality industry.
